Flapjack recipes are one of those things that always seem so easy to 'throw' together. Ok, its time to dispel the myth; no matter what I seem to do they always end up too soft and fall to bits before I get them anywhere near my mouth. Anyway, after a few attempts of different mixes of oats and syrup and I think I might of just cracked it! So, for my first blog, I thought I would share my flapjack relevation with you!

These Fabulous Flapjacks have the right amount of soft and chewiness and the most importantly don't break and fall on the floor before they get in your mouth.

What You'll Need

125g Unsalted Butter

125g Brown Sugar - I like to use soft, dark Muscovado

2-3 Tablespoons Golden Syrup

250g Rolled Porridge Oats

A Good Handful of Dried Fruit - I like dried, sweet cranberries and raisins

What You'll Need to Do

Preheat the oven to about 190 degrees C

Melt the butter, sugar and golden syrup in a saucepan over a medium heat

In a large bowl mix the rolled porridge oats and dried fruit

Pour the melted butter, sugar and syrup over the oats and fruit

Mix together until the oats and fruit are coated with the syrup mix

Pour the oat mix in a 20cm greased baking tray and press down with the back of a wooden spoon

Put the flapjack in the oven for about 20 minutes to bake

Leave the flapjack to cool for 10 minutes, then....

EAT and ENJOY!!!

Servings: 15-18 depending on the size you cut up the flapjack into.
